Tomato Chicken

I don't know what else to call this except tomato chicken. It is so good, and it is by far the easiest thing I have made in quite awhile.

First, here are two pictures of Oscar trying to get at the food while I'm cooking!





The first thing that you need to do is heat a few tablespoons of olive oil in a pan. Add the chicken breasts, 1/2 yellow onion diced, 2 cloves diced garlic, salt and pepper. Cook about 3 minutes per side, until lightly browned on each side.



Add 1/2 cup dry white wine, bring to a boil and let simmer for a few minutes.



Add one can petite diced tomatoes (drained) and oregano. Partially cover and let simmer five to seven minutes, until the sauce becomes a bit thicker and the chicken is done.



I served mine with the Parmesan garlic rice by Rice a Roni.



We are now sitting down at the kitchen table to eat and Oscar is plotting his move to get on the counter and eat the remnants...



He is getting closer....



Now he has come up behind Dad and is trying to figure out how to get on the table without us noticing.
